Cuchillo: Tasting Table

It was a sunny evening in Vancouver, suitable to enjoy the Latin American flavours at Cuchillo Restaurant together with a couple of fine wines and cocktails. We also experienced the different flavours of tequila and mezcal and learned of the differences between them. We started our evening with a margarita cocktail together with House Made Guacamole and Corn Chips followed by Brussel Sprout Frita with Mexicano Togarashi flavoured with Lemon and Honey along with a refreshing 2022 Muga Rioja Blanco, then a Queso Saganaki Taco with Rajas Con Crema, Yam Frita and Pico de Gallo before Wild Argentine Sea Prawns with Butter Browned Corn Arepas and Green Apple and Jalapeño with Pipian Verde, all very tasty treats with delicious flavours.
We served a beautifully smooth 2016 Casa Rojo Bierzo Ladron from Spain’s Castilla y Leon district and a meat course of Confit of Local Pork Belly with Maple Chipotle and Tamarind, Patacones, and Chicharron before indulging in a Dulce de leche dessert with Ancho Chili Cinnamon Churros and a dessert cocktail. A sweet finish to a meal that enticed our senses.
