Our 2022 events programme in Vancouver started with a delicious Dinner at the Diner, a very fine meal in a very casual location. Chef Quang Dang, a past Bocuse d’Or competitor and past Executive Chef at some of Vancouver’s finest restaurants prepared an Haute Cuisine dinner at the DICED Discovery Diner where he supports the social enterprises of Chef Don Guthro.
Our dinner began with a reception of Segura Viudas Cava Brut Rosado and multiple canapes - Marinated cucumber stuffed with hand peeled baby shrimp; Cave aged gruyère gougère, jambon blanc cream; Albacore tuna tartare, kettle fried potato chip, pickled mustard seeds; Oven roasted cherry tomato frittata, house smoked mayonnaise.
We then were seated at traditional diner banquettes for our first course of Barely Seared Pacific Provider Wild Coho Salmon with Beetroot “bon bons”, shaved root vegetables, Italian parsley sauce + extra virgin olive oil accompanied by a tasty white Bordeaux, 2015 Château de Romance Grand Vin. Next came Double Stuffed Ravioli with Black Burgundy truffles + potato, prosciutto + spinach and a Roasted mushroom ragout with brown butter paired well with 2014 Undurraga Pinot Noir Terroir Hunter, from Chile’s Leyda Valley.
Our main course was Fraser Valley Porchetta prepared with Salt baked onions, braised cabbage, Chorizo + whole grain mustard jus together with a 2012 Rioja Lindes de Remelluri Viñedos de Labastida, a wine from Spain’s icon, Telmo Rodriguez. A sweet finish was provided with a Roasted pineapple galette with Tropical fruit salad, vanilla crème anglaise, coriander sugar, a delicious ending requiring no accompanying wine.
